Make your own acai bowl at home! This thick blended acai smoothie gets a tropical kick with frozen mango and pineapple – then is topped with your favorite fruits/nuts and seeds.
A couple years ago I started seeing smoothie bowls pop up on menus, it seemed kind of odd to me to eat a smoothie with a spoon out of a bowl rather than just drink it out of a straw – I just didn’t get it. Well I started to get more curious and decided to try one out for myself. Let me tell you, I definitely get it now. You see, smoothie bowls are special for one big reason, they are covered in amazing toppings. Obviously toppings > no toppings which is why smoothie bowls are king.
I’ve had a good handful of delicious smoothie bowls from those adorable (*ahem* expensive) juice bar shops and one thing they always have on the menu is acai. If you’re unfamiliar, acai is full of antioxidants and omegas – so it basically amps up your smootie a bit! I am someone who loves to make things at home – especially when its something as simple as a smoothie bowl so when I randomly found frozen acai (these ones from Sambazon) at my local grocery store I was super excited (probably more than I should admit). If you can’t find frozen concentrate you can also use powdered acai for these smoothies.
This tropical smoothie bowl is my go to combo. The banana and the mango add some sweetness to the mixture and the pineapple adds some fruitiness. I like to add some almond milk to make it creamy. Then there are the toppings – I always sprinkle on some unsweetened shredded coconut, chia seeds, granola, the other half of the banana, and whatever fresh fruit I have in my fridge at the moment. This week it was pomegranate and blueberries. I like to drizzle it with a little raw honey on top to add sweetness (agave works well too) or you can skip that all together.
These are super simple to make – toss the ingredients in the blender and give it a whirl, then sprinkle on your toppings. I love to lay everything in rows (like I did in the photos) because it makes me feel fancy and I swear it makes it taste better . Sure it takes maybe 5 extra seconds to do, totally worth it in my book!
- 1 packet of frozen acai concentrate (A powder like this one would work too!)
- 1 cup frozen mango and pineapple
- 1 banana, divided
- ¼ cup Almond Breeze almond milk
- chia seeds
- shredded coconut
- pomegranate seeds
- Raw honey
- In a blender combine acai, frozen mango and pineapple, ½ of the banana and almond milk. Blend until smooth and no chunks of fruit remain, but still somewhat thick. Pour into a bowl.
- Top smoothie bowl with remaining banana slices, shredded coconut, granola, chia seeds, pomegranate seeds and blueberries – or whatever fruit you have on hand. Drizzle with honey. Eat immediately.
