Friday nights in our house normally call for Mexican food – something about celebrating the weekend calls for kicking off the night with chips, salsa & guacamole and a batch of margaritas. I guess that’s our version of comfort food here in the desert.
With Cinco de Mayo quickly approaching, I had to share this recipe for this really fun margarita.
Remember this spicy Jalapeno Infused Tequila recipe I shared on the blog? Well this is one of my absolute favorite cocktails to make with it. The tequila takes a little bit of foresight and planning, but it only takes 5 minutes of prep time and 2 days of waiting. Then you can enjoy it all summer long in delicious margaritas like this pineapple jalapeno one.
Something about the combination of sweet pineapple and spicy jalapeno with tequila works magic in this drink. It’s a unique flavor, like no other margarita – just enough spice to keep you coming back for more.
I usually just use the Dole canned pineapple juice since it’s easy and I normally have some on hand, but you could also use fresh pineapple juice. I like adding a slice of pineapple and a slice of jalapeno to the glass for a garnish too – and you get to snack on the pineapple slice after your drink it gone.
