After the new year it seems like everyone is on this mad dash to eat healthy and work out. It’s a new year and time to start fresh, right?
I’ll be the first one to admit that eating a salad every day gets old really quick. I despise eating the same thing two days in a row (unless the leftovers are really amazing), so I have to switch up our dinners pretty regularly. As someone who loves to eat, restricting myself is not something I do well with. I like to make meals that aren’t freakily healthy, but are lighter than what you might normally eat and still comforting and fresh.
