I have the feeling that December is going to go by incredibly quick! My calendar is quickly filling up with holiday gatherings and activities. Did I mention that I can’t wait to put up our tree?? And enjoy some festive cocktails!
Today I another recipe for my 12 Cocktails of Christmas series – the Winter Wonderland Cocktail
The goal behind this drink was to create something all white – reminiscent of a snow day (although, I’ve never actually had one of those here in the desert..). Something fun and cheery, without being over the top with Christmas flavors. This time I skipped the peppermint and cranberry and tried something different.
Coconut and chocolate. Like an almond joy (minus the almond) or one of those coconut macaroon cookies dipped in chocolate. It’s a pretty sweet cocktail, so they go down easy. Almost like you’re drinking a cookie or candy bar.
And if you don’t like coconut (please don’t tell me if you don’t..) there is a pretty good chance you might like this drink. I served it to my friends husband who claimed he doesn’t like coconut and he was shocked that he liked it – in my opinion he was a pretty darn good taste tester since he tried anyways.
A few important notes about this drink. First, make sure you use the clear crème de cocoa. It makes all the difference in the look of this drink.
Also, my recipe calls for cream of coconut. There IS a different between cream of coconut, coconut cream, and coconut milk – so make sure you pick the correct one (or else your drink might turn our kinda icky). Cream of Coconut is thick and sweetened.
I found cream of coconut in the liquor section of my grocery store near all of the drink mixes and whatnot. One common brand is Coco Lopez.
- 1 oz Cream of coconut (such as CocoLopez)
- 1 1/2 oz Vanilla Vodka
- 1 1/2 oz Creme de Cocoa
In a cocktail shaker filled with ice, combine cream of coconut, vanilla vodka and creme de cocoa. Shake until well chilled and combined. Strain into an ice filled glass.
