I have to admit, so far this summer has been pretty sweet. Lance and I took a quick anniversary road trip to California for a weekend –
Filled with beach time, fireworks, roller coasters and some odd roadside attractions.
Another quick weekend trip had us exploring the beach and port in Rocky Point with friends.
And then there’s the countless trips to the lake and evenings spent grilling up summer’s tastiest dishes.
So tell me, What’s your summer been like so far? Any favorite moments?
Grilling is not only one of our favorite activities in the summer, but also a favorite way to cook. I specifically love to make hot dogs and burgers since I can do so many fun flavor combinations with them – they never get boring. Almost any savory flavor can get transformed into crowd pleasing hot dog. As an adult I am realizing why we ate hot dogs so frequently when we were kids – they are so easy and everyone loves them :)
For these amped up hot dogs we start with a quick and easy Asian style slaw. To keep the prep time down I sometimes use pre-shredded cabbage and carrots to make the slaw, it gets dinner on the table that much quicker. We mix in a few staple Asian flavors like soy sauce and ginger, a little Hoisin sauce for some sweetness and some lime juice to brighten it up – a quick toss and we’ve got our slaw complete.
The Sriracha mayo on these dogs are really what steals the show – the spiciness of the Sriracha works magic with that slaw. It’s crazy good . This mayo along is going to be made in my kitchen on a regular basis from now on, it was that good. And with only 3 ingredients and quick stir, you’ve got nothing to lose. Keep in mind you might want to start easy with the Sriracha and more as you mix, tasting it along the way – I was surprised that I ended up putting in a little more than I had initially thought.
We top our hot dogs with some of the sweet and tangy slaw, a healthy drizzle of spicy Sriracha mayo, then finish them with some cilantro and sesame seeds. A hot dog that’s fancy enough for entertaining, but quick and easy enough for a weeknight dinner!
- 2 cups shredded green cabbage
- 1 cup shredded carrots
- 4 scallions, sliced
- 2 Tbsp soy sauce
- 2 Tbsp peanut oil
- 1 tsp sesame oil
- 1 tsp fresh grated ginger
- 2 Tbsp rice vinegar
- 2 Tbsp Hoisin sauce
- 3 Tbsp fresh lime juice, divided
- ¼ cup mayo
- 2-4 tsp sriracha
- 4 hot dogs
- 4 hot dog buns
- Sesame sedes, optional
- Cilantro, optional
- In a medium bowl toss together cabbage, carrots and scallions. Set aside.
- In a small bowl whish together soy sauce, peanut oil, sesame oil, ginger, vinegar, hoisin sauce and 2 tbsp of the fresh lime juice until well combined. Pour soy sauce mixture over cabbage and toss well to combine.
- To make Sriracha mayo: Stir together mayo, Sriracha and lime juice until well mixed. Taste and add more Sriracha to achieve desired heat level.
- Cook hot dogs as directed on package.
- To assemble: Place 1 hot dog in each bun, top each one with Asian slaw and drizzle with Sriracha mayo. Garnish with sesame seeds and fresh cilantro is desired.
