For some reason the week before you leave on vacation always seems to draaag. At work it feels like hour have passed, but each time you look at the clock its been way less…such a disappointment. I can already tell that’s how this week will be – on the bright side I have Friday off so we can leave for Rocky Point!
I’m excited to indulge in some tasty drinks. This trip will definitely be full of margaritas and Mexican beer on the beach. Do you have a favorite vacation beverage?
I like to make sure my vacations are full of delicious drinks. Like this Rum Punch – it stole the show during last years trip to San Diego. We had a pitcher in the fridge and sipped on it in the balcony. Although I didn’t bring any cocktail umbrellas so they didn’t look quite as cool
Rum Punch is sweet and tropical. Great for summer entertaining – or just pretending that you’re in sitting on a beach somewhere in the Caribbean.
On our latest episode of Drink & Dish, Ari and I show you how to make a couple of our favorite summer inspired treats. Ari makes some Creamsicle Cookies (you can find the recipe here!), while I whip up this Rum Punch:
As I mention in the video, I’ve made this drink with both grenadine and pomegranate juice. I have found that grenadine gives the drink a brighter looking vibrant orange color (like in the pictures), but it does add more sweetness to the drink – which I happen to like. But I know that Ari doesn’t like her drinks too sweet so I swapped it out for some pomegranate juice to switch it up. Just use what you like best – or what you have on hand!
- ¼ cup lime juice
- 2½ cups pineapple juice
- 2½ cups orange juice
- ½ cup spiced rum
- ½ cup dark rum
- ¾ cup coconut rum
- ¼ cup grenadine (or pomegranate juice)
- Orange slices (optional)
- In a large pitcher combine all ingredients except orange slices. Stir to combine and refridgerate until well chilled.
- Serve over ice and garnish with orange slices and cocktail umbrellas.
