For a couple years now our friends Crystal and Ross have been trying to get us to go to Halloween Horror Nights at Universal Studios, but unfortunately it has never seemed to work out for us all to go. But with some advanced planning we were able to make it happen this year – tickets went on sale this week and we’ve got ours!
For those of you who are unfamiliar with Halloween Horror Nights (HHN), its held at night Universal Studios Hollywood (Orlando has one too!) and they basically turn the whole park into a giant haunted house (you can watch a teaser video here). They have different themes each year for the mazes too.
Truth be told, I am a little terrified to be going to HHN. I am the girl who is scared of the dark, I mute the tv when there are commercials for scary movies, I close my eyes at the first glimpse of a scary scene in a movie. As a general rule of thumb, I don’t like to be scared. But I trust my friends and they say this is fun, so I’m giving it a shot. I will undoubtedly be a hot mess (don’t judge me if I cry!) – there are people waiting around to scare you the whole night.
Before I get ahead of myself talking about Halloween – lets get back to all the summery goodness we still have left!
In keeping with this weeks unofficial theme of embracing summer, I wanted to share one of my favorite beverages we’ve been enjoying all summer long!
The sweetness of the fresh mango works perfectly with the tart lemons. In other words, a pretty perfect lemonade. Personally, I love the color – its bright and inviting. If we were basing it all on looks, I’d pick this one
Ingredients:
- 3 cups water, divided
- 1/3 cup sugar
- 2 mangos, peeled and pureed
- 1 cup freshly squeezed lemon juice
Directions:
In a small microwave safe bowl combine 1 cup of water and sugar. Heat on high for 1 minute, or until sugar has all sugar has dissolved. Let cool.
In a large pitcher combine sugar mixture, remaining water, lemon juice and mango puree. Stir until well mixed. Serve over ice and garnish with fresh mint sprigs, if desired.

i’ve never had the combination of mango and lemonade together and i’m seriously wondering why i never thought to do that!! this sounds amazing and so refreshing! i’m totally not ready for halloween – i just can’t believe it’s 2 months away!!
