I am a big fan of easy appetizers and this one falls right into that category. I love cream cheese – and I would eat it right out of the package if I could…okay so I occasionally sneak a bite when I am cooking ;) But I think that switching this up with a goat cheese would also be a nice variation as well.
Cucumbers with cream cheese and pomegranate
½ cup pomegranate Seeds
1 (8oz) package of cream cheese – softened
1 clove garlic, finely minced
2 cucumbers, English, if available
Slice cucumbers to bout 1/4 inch thick, set aside. In a small bowl stir together cream cheese and garlic until well combined and cream. Put cream cheese into a pastry bag or a ziplock bag with the corner snipped off. Pipe a dollop of the cream cheese mixture onto each cucumber slice. Top cucumbers with a few pomegranate seeds.
